My favorite "paper" resource is a map produced specifically for bicyclists. One map covers the south bay through Monterey Bay areas. They're incredibly detailed, even noting road gradients, water sources, roadside fruit stands, historical markers, spots with good views, etc. The maps are in bike stores all over the place, but they're probably available directly from the cartographer who produced them, Krebs Cycle Products, P.O. Box 7337, Santa Cruz, CA 95061. The map you'll want is called "South San Francisco Bay & Monterey Bay Areas Bicycle Touring Map. That said, I'm less inclined to bird north of my "home range" into central Santa Clara County than to bird San Benito and southern Santa Clara counties (where I live and work) and west into Santa Cruz and Monterey Counties (personal inclination, I guess) so others will certainly have better advice.
